Soaked Orange Sponge Recipe

Ingredients:

For the Sponge:

  • 6 eggs
  • 180g sugar
  • 150g all-purpose flour
  • 30g cornflour
  • 30g butter
  • Rind of 1 orange
  • Rind of 1 lemon

For the Syrup:

  • 60g sugar
  • 25ml water
  • Juice of 1 orange
  • 1 tbsp caster sugar

For the Filling:

  • 80g orange curd
  • 250ml whipped cream

For Decoration:

  • Crystallized fruit

Instructions:

Preparing the Sponge:

  1. Grease or spray and baseline a 20cm round or square tin.
  2. Preheat oven to 190°C (375°F).
  3. In a bowl over simmering water, combine eggs, sugar, lemon, and orange rinds.
  4. Whisk with an electric whisk for about 8 minutes until the mixture is pale and creamy.
  5. Remove from heat.
  6. Sift together the flours and fold into the egg and sugar mixture along with the melted butter.
  7. Pour the batter into the prepared cake tin and bake in the center of the oven for 40 minutes or until well risen.

Making the Syrup:

  1. In a pan, combine syrup ingredients and heat gently until the sugar dissolves.
  2. Bring to a boil and simmer for 2 minutes.
  3. Spoon the syrup over the cooked sponge and let it cool in the tin until cool.
  4. Turn the cake out and split into 3 layers carefully.

Preparing the Filling:

  1. Beat the orange curd and fold in the whipped cream.
  2. Reserve a third of the mixture and use the rest to fill the cake as well as the sides and top.
  3. Spoon the reserved mixture into a piping bag and pipe rosettes on top of the cake.
  4. Decorate with crystallized fruit.

Making the Cake:

  1. Place orange rind and sugar in a bowl.
  2. Whisk lemon juice together with the eggs, then pour this mixture over the sugar.
  3. Add the butter in little pieces and place the bowl over a pan of simmering water.
  4. Stir frequently until thickened, about 20 minutes.
  5. Leave to cool.
  6. Store in the fridge if not using for the cake straight away.
