Wild Rice and Five-Spice Chicken Salad

This was originally published in ‘Bon Appetit.’ It is actually simple to make and not labour intensive in spite of the cook time and prep time – a lot of that is waiting for things to cook or cool.

Ingredients:

Raw wild rice 1 cup
Five-spice powder 1 tsp
Sugar 1 tsp
Boneless skinless chicken breasts 2
Rice vinegar 1/4 cup
Crushed red pepper flakes 1/4 tsp
Tomatoes 1
Green onion 1
Pickled ginger 1/4 cup
Oranges 2

Instructions:

  1. Cook the Wild Rice:

    • In a pot, bring 3 cups of water to a boil.
    • Add 1 cup of raw wild rice.
    • Reduce heat to a simmer and cook for about 35 minutes, until the rice is tender.
  2. Prepare the Chicken:

    • Preheat the oven to 400ยฐF (200ยฐC).
    • Rub the boneless skinless chicken breasts with 1 tsp of five-spice powder, 1 tsp of sugar, and sprinkle with salt.
    • Place the chicken on an oiled baking pan and bake for approximately 12 minutes, or until just cooked through.
    • Allow the chicken to cool, then dice it into bite-sized pieces.
  3. Prepare the Dressing:

    • In a small bowl, whisk together the juice from 2 oranges, 1/4 cup of rice vinegar, a drizzle of olive oil and sesame oil, and 1/4 tsp of crushed red pepper flakes.
    • Season the dressing with salt and pepper to taste.
  4. Assemble the Salad:

    • In a large mixing bowl, combine the cooked wild rice, diced chicken, chopped tomatoes, sliced green onions, and 1/4 cup of pickled ginger.
    • Peel and section the oranges, then add them to the salad mixture.
  5. Mix in the Dressing:

    • Pour the prepared dressing over the salad ingredients.
    • Gently toss everything together until well combined and evenly coated with the dressing.
  6. Chill and Serve:

    • Cover the salad bowl and chill it in the refrigerator.
    • This salad can be made up to 4 hours ahead of serving, allowing the flavors to meld together beautifully before enjoying.
