Instructions

  1. Prepare the Oranges: Start by grating the zest from two fresh oranges. Afterward, squeeze the oranges to obtain 100 ml of juice. Make sure to strain the juice using a fine mesh strainer to remove any pulp.

  2. Mix the Wet Ingredients: In a large bowl (or a deep aluminum pot), add the whole eggs, orange juice, zest, and a pinch of fine salt. Combine these ingredients gently. Add the sugar and mix until smooth.

  3. Heat the Mixture: Place the bowl over a pot filled with simmering water (double boiler method). Warm the mixture gently to about 40°C (104°F) while continuously stirring to ensure the eggs are not cooked.

  4. Combine with Dry Ingredients: Once the mixture reaches the desired temperature, transfer it into a stand mixer. In a separate bowl, sift together 300g of flour and the baking powder. Gradually add the sifted flour to the wet mixture, stirring to combine.

  5. Finish the Batter: Once the initial 300g of flour is incorporated, slowly add the remaining 110g of flour, mixing until fully combined.

  6. Bake the Plumcake: Preheat your oven to 180°C (350°F). Grease and line a 30×11 cm (12×4 inches) loaf pan with parchment paper. Pour the batter into the prepared pan, smoothing the top with a spatula.

  7. Bake to Perfection: Bake the plumcake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool and Serve: Once baked, allow the plumcake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
