Instructions

  2. Grate the citrus: While the butter cools, wash and dry the lemon and orange thoroughly. Using a grater, zest the skin of both fruits, being careful not to grate any of the bitter white pith. After zesting, squeeze both the lemon and orange to extract their juice, aiming for approximately 40 grams of juice from each fruit. Set aside both the zest and juice for later.

  3. Mix dry ingredients: In a large mixing bowl, sift together the all-purpose flour and baking powder using a fine sieve. This will help to ensure that the baking powder is evenly distributed throughout the flour.

  4. Prepare the dough: Create a well in the center of the dry ingredients and add the eggs (at room temperature), granulated sugar, and citrus zest. Start mixing the ingredients with your hands, slowly incorporating the dry ingredients into the wet ingredients.
