- Working over a large plate or bowl, peel and remove the pith from 2 oranges, keeping the pulp intact. Cut out each section from between the membranes and set aside. Reserve the juice and combine it with the juice from the third orange. Strain and set aside.

- Heat a large cast iron frying pan over medium-low heat. Add 3 oz of butter and allow it to foam. Once foaming, add the liver slices. Cook gently for no more than 2 minutes on each side, ensuring it remains soft with no outer crust and pink inside. Remember, the liver will continue cooking from its residual heat.

- Transfer the cooked liver slices to a heated serving dish and keep them warm by covering with a plate.

- Increase the heat to medium and deglaze the pan with the reserved orange juice. Scrape up any meat residue with a fork. Season the sauce with salt and ground allspice. Allow it to bubble, then add the reserved orange sections. Quickly tip the pan back and forth to coat the fruit in the hot juice.
