Ingredients:

  • 2 sweet dumpling squash (or acorn squash)
  • 1/2 cup pine nuts
  • Zest of 3 tangerines
  • 1/3 cup tangerine juice
  • 1/4 cup brown sugar
  • 2 tablespoons butter
  • 1/4 teaspoon allspice

Instructions:

1 Preheat oven to 375 degrees F.
2 Slice the squash in half and remove the seeds and fibers. Place the squash halves skin side up in a baking pan filled with 1/2-inch of water.
3 Bake the squash in the preheated oven for 35-45 minutes or until tender.
4 Once the squash is tender, scoop out the flesh and place it in a bowl. Mash the squash flesh.
5 Add the remaining ingredients to the mashed squash, including the pine nuts, tangerine zest, tangerine juice, brown sugar, butter, and allspice. Stir well to combine.
6 Transfer the mixture to a small casserole dish.
7 Place the casserole dish in the oven and bake for an additional 15-20 minutes or until heated through.
8 Once heated through, remove from the oven and serve hot.
