Instructions

  1. Prepare the Grill or Pan:

    • Preheat your grill, broiler, grill pan, or skillet over medium heat.
  2. Prepare the Drunken Part:

    • Cut 2 of the limes into 12 wedges each.
    • In a shaker or mortar, combine 12 lime wedges (2 limes) with the granulated sugar.
    • Muddle or mash using the end of a wooden spoon or pestle until the lime pulp starts separating from the rind and the sugar is dissolved.
    • Add the rum to the lime mixture and shake or stir to combine thoroughly.
  3. Marinate the Shrimp:

    • Pour the rum mixture (including the lime rinds) into a shallow bowl.
    • Add minced garlic, olive oil, and the peeled and deveined shrimp.
    • Stir gently to coat the shrimp evenly with the marinade.
    • Set aside for 5 to 7 minutes (no longer, to prevent over-marination where the lime juice could “cook” the shrimp).
    • Drain the shrimp, discarding the marinade.
  4. Grill the Shrimp:

    • If using skewers, thread the marinated shrimp onto them.
    • Lightly oil the grill or pan to prevent sticking.
    • Grill the shrimp, turning as needed, until they are pink and cooked through, about 2 to 3 minutes per side.
  5. Serve:

    • Optionally, garnish the grilled shrimp with fresh mint or cilantro.
    • Serve immediately, accompanied by the remaining lime wedges for an extra burst of citrus flavor.

Notes

  • Ensure not to marinate the shrimp for more than 7 minutes to avoid the lime juice from “cooking” the shrimp excessively.
  • This dish pairs well with a side of rice or a fresh salad for a complete meal.
  • Adjust the amount of rum according to your preference for a stronger or milder rum flavor in the shrimp.

Enjoy the vibrant flavors of lime and rum in this quick and easy Drunken Shrimp recipe, perfect for any occasion where you want to impress with minimal effort!
