Ingredients

  • 1 wheel of Camembert cheese (or Brie)
  • 6 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • ¼ cup ale (or beer of choice)
  • 3 cloves roasted garlic
  • 1 teaspoon caraway seeds
  • 1 teaspoon sweet paprika
  • 1 Spanish onion, diced
  • ¼ cup red onions, finely diced
  • ¼ cup radishes, thinly sliced
  • Salt and pepper, to taste

Instructions

  1. Prepare the Cheese Mixture: Start by placing the wheel of Camembert cheese (or Brie) into a medium-sized bowl. Add the softened cream cheese, unsalted butter, and ale. Mix thoroughly until well combined.

  2. Incorporate Flavors: Add the roasted garlic, caraway seeds, sweet paprika, and salt and pepper to taste. Beat the mixture well until everything is fully integrated.

  3. Prepare the Onions: Place the diced Spanish onion into a strainer and rinse it under cold running water. Once rinsed, drain the onions and transfer them to a clean kitchen towel. Squeeze out as much liquid as possible from the onions.

  4. Combine Ingredients: Fold the prepared onions into the cheese mixture until evenly distributed.

  6. Prepare the Bread: If using French bread, slice it into ¼ inch thick slices. For German bread, halve it lengthwise and then cut into ¼ inch thick slices.

  8. Roast the Garlic: For a richer flavor, roast the garlic before adding it to the mixture. Peel off any papery coating from the garlic head. Using a sharp knife, cut about ½ inch from the top of the bulb to expose the tips of the garlic cloves. Place the garlic in a small baking dish, drizzle with olive oil, and season with salt. Pour ¼ cup of water into the bottom of the dish, cover tightly with foil, and roast in a preheated oven at 375°F (190°C) for about 1 hour. The garlic is done when a sharp paring knife inserts easily into the cloves.
