Instructions

  1. Prepare the Cherries
    Start by thoroughly washing the fresh cherries, drying them gently with a clean towel. Remove the stems and pit the cherries, then set them aside. Make sure to handle the cherries with care to avoid any juices spilling onto the counter.

  2. Prepare the Batter
    In a large mixing bowl, whisk together the eggs and sugar until the mixture becomes light and fluffy. The eggs should increase in volume, reaching about double their original size. This process should take a few minutes of vigorous whisking.

  3. Incorporate the Dry Ingredients
    Next, sift the all-purpose flour and add it to the egg mixture, followed by a pinch of salt and the seeds from the vanilla pod. If you’re using vanilla extract, simply add it to the batter. Gently combine the ingredients using a hand whisk.

  4. Add the Milk
    Slowly pour in the milk, a little at a time, ensuring the batter remains smooth and free of lumps. This gradual addition of milk helps to prevent curdling and gives the batter its desired consistency. The result should be a pourable, slightly thick batter.

  5. Prepare the Baking Dish
    Grease a round, low-edged baking dish with a diameter of about 28 cm (11 inches) using a little butter. Sprinkle the base of the dish with the 30g of sugar to give the clafoutis a sweet, caramelized finish as it bakes.

  6. Assemble the Clafoutis
    Evenly distribute the pitted cherries over the sugar-coated bottom of the prepared baking dish. The cherries should cover the base completely.

  7. Bake
    Pour the prepared batter over the cherries, ensuring they are submerged in the mixture. Place the dish in a preheated static oven at 180°C (350°F) and bake for about 55 minutes, or until the clafoutis has turned golden brown on top and is set in the center.

  8. Serve and Enjoy
    Once baked, remove the clafoutis from the oven and let it cool slightly before serving. This dessert can be enjoyed warm or at room temperature, dusted with powdered sugar or served with a dollop of whipped cream or vanilla ice cream.
