Instructions

  1. Prepare the Ingredients:

    • In a large mixing bowl, combine the whole green moong dal, basmati rice, chana dal, and yellow moong dal.
    • Rinse thoroughly with water and soak the mixture for about 1 hour to soften the dals and rice.
  2. Cook the Khichdi:

    • Heat a pressure cooker over medium heat and add the ghee.
    • Once the ghee is melted and hot, add cloves, cumin seeds, and mustard seeds.
    • Let the spices sizzle for a few seconds until they release their aroma.
  3. Add Vegetables and Spices:

    • Add the mixed vegetables (carrots or any other of your choice) to the cooker.
    • Sprinkle in the turmeric powder, red chili powder, and salt to taste.
    • Stir well, ensuring the spices coat the vegetables evenly.
  4. Add the Lentil-Rice Mixture:

    • Drain the soaked dal and rice mixture and add it to the cooker.
    • Mix everything thoroughly, ensuring all ingredients are well-combined.
  5. Pressure Cook:

    • Add enough water to cover the ingredients, usually about 2 to 2.5 cups.
    • Close the cooker with its lid and cook for approximately 3 whistles on medium heat.
    • After 3 whistles, turn off the heat and allow the pressure cooker to cool naturally.
  6. Serve:

    • Once the cooker has cooled, open the lid and gently fluff the khichdi.
    • Garnish with fresh coriander leaves.
    • Serve warm with a side of Gujarati Kadhi for a comforting and healthy meal.
