Instructions:

This should take about 10 minutes. Once cooked, remove the chicken from the skillet and drain on paper towels. Transfer the chicken to a casserole or baking dish and set aside.

  2. Make the Sauce: In the same skillet, add a bit more oil if needed. Sauté the chopped onions and minced garlic over medium heat until they become transparent and fragrant, about 5 minutes. To the onions and garlic, add the lemon juice, lemon rind, tomato sauce, brown sugar, dry mustard, curry powder, vinegar, soy sauce, salt, and freshly ground black pepper. Stir well to combine all the ingredients and let the mixture simmer for a few minutes, allowing the flavors to meld together.

  3. Combine and Cook: Once the sauce has simmered and thickened slightly, pour it evenly over the chicken pieces in the baking dish. Ensure that the chicken is well coated with the sauce.
