Ingredients

1 Onion (finely chopped)
3 tbsp Cider vinegar
3 tbsp Prepared mustard
1/2 cup Fresh parsley (chopped)
2 tbsp Sugar
1/2 cup Water

Instructions

  1. Boil the Potatoes
    Place the potatoes in a large pot and cover them with water. Bring the water to a boil over medium-high heat, and cook until the potatoes are fork-tender, which usually takes about 15-20 minutes. Once done, drain the water and set the potatoes aside to cool slightly.

  2. Prepare the Dressing
    In a large mixing bowl, combine the cider vinegar, prepared mustard, sugar, and water. Whisk everything together until the sugar dissolves and the mixture is well blended.

  3. Mix in the Onion and Parsley
    Add the finely chopped onion and parsley to the dressing. Stir everything together to allow the onion to absorb some of the dressing’s flavors, which helps to soften the onion’s sharpness.

  4. Add the Potatoes
    Once the potatoes have cooled slightly, slice them into bite-sized pieces and add them to the bowl with the dressing mixture. Gently toss the potatoes with the dressing, making sure each piece is coated evenly.

  5. Chill and Serve
    Cover the bowl with plastic wrap and place it in the refrigerator to chill for at least 1 hour before serving. This allows the flavors to meld together beautifully, resulting in a delicious, tangy potato salad. Serve chilled and enjoy!
