Simple Chicken Soup ala Warteg

Ingredients:

  • 2 carrots, peeled and cut into chunks
  • 8 green beans, trimmed and cut into pieces
  • 1 potato, peeled and cut into chunks (optional, as not available)
  • 4 cups cabbage, chopped
  • 1 tomato, cut into wedges
  • 250 grams chicken, boiled until tender, then cut into cubes
  • Chicken broth (from the boiled chicken)
  • 1 stalk green onion, chopped
  • 1 sprig celery, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon whole peppercorns
  • To taste: nutmeg, sugar, and salt

Steps:

  1. Prepare the Spice Base:

    • In a mortar and pestle, finely grind the garlic cloves, peppercorns, and nutmeg.
    • Heat a small amount of oil in a pot and sauté the ground spices until fragrant.
  2. Add Broth:

    • Pour in the chicken broth and bring it to a boil over medium heat.
  3. Cook Vegetables:

    • Once boiling, add the carrots, green beans, and potato (if using). Cook until the vegetables are tender.
  4. Incorporate Chicken and Seasonings:

    • Add the cubed chicken, chopped green onion, and tomato. Season with sugar and salt to taste. Adjust seasoning as needed.
  5. Simmer:

    • Allow the soup to simmer once more to meld the flavors.
  6. Finish the Soup:

    • Before serving, stir in the chopped cabbage and celery. Cook until the cabbage is just wilted.
  7. Serve:

    • Remove from heat and serve hot.
