Simple Chicken Soup ala Warteg
Ingredients:
- 2 carrots, peeled and cut into chunks
- 8 green beans, trimmed and cut into pieces
- 1 potato, peeled and cut into chunks (optional, as not available)
- 4 cups cabbage, chopped
- 1 tomato, cut into wedges
- 250 grams chicken, boiled until tender, then cut into cubes
- Chicken broth (from the boiled chicken)
- 1 stalk green onion, chopped
- 1 sprig celery, chopped
- 2 garlic cloves, minced
- 1/2 teaspoon whole peppercorns
- To taste: nutmeg, sugar, and salt

Prepare the Spice Base:
- In a mortar and pestle, finely grind the garlic cloves, peppercorns, and nutmeg.
- Heat a small amount of oil in a pot and sauté the ground spices until fragrant.

Add Broth:
- Pour in the chicken broth and bring it to a boil over medium heat.

Cook Vegetables:
- Once boiling, add the carrots, green beans, and potato (if using). Cook until the vegetables are tender.

Incorporate Chicken and Seasonings:
- Add the cubed chicken, chopped green onion, and tomato. Season with sugar and salt to taste. Adjust seasoning as needed.

- Allow the soup to simmer once more to meld the flavors.

- Before serving, stir in the chopped cabbage and celery. Cook until the cabbage is just wilted.
