Ann’s Old Fashioned Meatloaf Recipe

Ingredients:

  • 2 onions
  • 1 carrot
  • 1 garlic clove
  • 3-4 eggs
  • 2 tsp salt
  • 1 1/2 tsp fresh ground pepper
  • 2 tsp dried thyme leaves
  • 2 tbsp fresh parsley
  • 1 tbsp Worcestershire sauce
  • 1/2 cup catsup
  • 1/4 cup tomato sauce (plus extra for serving)
  • 1 lb ground beef
  • 2/3 cup bread crumbs
  • 1/2 cup tomato sauce (for topping)

Instructions:

  1. Preheat and Prepare: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a loaf pan and set aside.

  2. Saute Vegetables: In a skillet, sauté the onions and carrot in oil until the carrots are soft. Add the garlic and sauté for an additional 1-2 minutes. Remove from heat and set aside to cool.

  3. Mix Meatloaf Mixture: In a large bowl, combine the ground beef, bread crumbs, and the cooled sautéed vegetables.

  4. Prepare Egg Mixture: In another bowl, whisk together the eggs, salt, pepper, thyme, parsley, Worcestershire sauce, and catsup until well combined.

  5. Combine Ingredients: Pour the egg mixture over the ground beef mixture and use your hands to gently combine everything. Be careful not to overmix, as this can result in a dry meatloaf.

  6. Shape and Bake: Gently pat the meatloaf mixture into the greased loaf pan, being careful not to press down too firmly. Pour 1/2 cup of tomato sauce evenly over the top of the meatloaf mixture. Place the loaf pan in the preheated oven and bake for approximately 1 hour and 15 minutes, or until the meatloaf is cooked through.

  7. Rest and Serve: Once cooked, remove the meatloaf from the oven and place it on a wire rack to cool for 10 minutes. This allows the juices to redistribute, making for a juicier meatloaf.

  8. Slice and Serve: After resting, carefully remove the meatloaf from the pan and slice into thick slices. Serve warm or cold, with extra tomato sauce on the side if desired.
