Prep the Fruit: Start by washing and slicing the oranges and lemon thinly, removing any seeds.

Simmer with Water: In a large saucepan, combine the sliced oranges, lemon, and 1 cup of water. Allow the mixture to simmer for about 5 minutes.

Soak Overnight: Cover the saucepan and let the fruit mixture stand for 12-18 hours in a cool place to soften.

Cooking: After soaking, cook the mixture rapidly until the peel is tender, which should take approximately 1 hour.

Measure and Add Sugar: Measure the cooked fruit mixture along with any remaining liquid. For each cup of fruit mixture, alternate with 1 1/2 cups of sugar, layering them in a large saucepan.

Dissolve Sugar: Slowly bring the mixture to a boil, stirring continuously until the sugar completely dissolves.

Cook to Thicken: Once the sugar has dissolved, continue to cook the mixture rapidly for about 25 minutes or until it thickens. Stir occasionally to prevent sticking.

Prepare Jars: While the marmalade is cooking, sterilize your jars and lids by boiling them in hot water. Keep them hot until ready to use.

Fill Jars: Carefully pour the hot marmalade into the hot jars, leaving about 1/4 inch of headspace at the top.

Seal Jars: Wipe the jar rims clean, then adjust the caps securely.

Processing: Place the filled jars in a boiling water bath and process them for 10 minutes.

Cool and Store: Once processed, remove the jars from the water bath and allow them to cool completely. Check the seals before labeling and storing your orange marmalade.
