Instructions:

  1. Pressure Cook the Dal:

    • Begin by washing the toor dal thoroughly. Place the dal and chopped green chilies in a pressure cooker with 1 cup of water. Cook on medium heat, and once you hear a couple of whistles, reduce the heat to low and continue cooking for another 3-4 minutes.
    • After turning off the heat, allow the pressure to release naturally. This ensures the dal cooks further in the residual heat and becomes soft and tender.
  2. Prepare the Coconut Paste:

    • While the dal is cooking, prepare the smooth mixture. In a blender, combine the grated fresh coconut, turmeric powder, cumin seeds, and a little water. Blend it to a fine paste to form a smooth, saucy consistency.
  3. Combine the Paste and Dal:

    • Once the pressure is released from the cooker and the dal has cooled slightly, open the lid and add the coconut paste to the cooked dal. Use a whisk to blend everything well together, ensuring the flavors are evenly distributed.
  4. Season the Dal:

    • Heat 2 tablespoons of ghee in a small pan. Once hot, add the cumin seeds and asafoetida. Let them crackle for a few seconds, releasing their aromatic flavors.
    • Turn off the heat and pour the seasoning into the cooked dal mixture, stirring it in to incorporate the flavors.
  5. Serve:

    • Transfer the prepared Varan Bhaat to a serving bowl. This dish is best served hot alongside plain steamed rice for a comforting meal.
    • Optionally, some people like to add a few curry leaves during the tempering process, which can be included based on personal preference.
