Ingredients
- 500 grams beef trimmings
- 1 large radish, cleaned and sliced as desired
- 1 stalk lemongrass, bruised

- Chopped celery to taste
- 2 cardamom pods

- 1 shallot
- White pepper to taste
- Coriander to taste
- Nutmeg to taste
- Cumin to taste
- A little oil for sautéing
- Salt to taste
- Beef-flavored bouillon powder to taste

Clean and Boil the Beef:
Begin by thoroughly cleaning the beef trimmings. Bring a pot of water to a boil, add the beef, and let it cook briefly. Discard the first batch of water to ensure a clear broth. Refill the pot with fresh water and continue to boil the beef until it becomes tender and flavorful, forming a rich broth. -
Slice and Reboil the Beef:
Once the beef is tender, remove it from the pot and slice it according to your preference. Return the sliced beef to the pot. If needed, add more water to ensure there’s enough broth. -
Add Aromatics:
Continue to boil the beef while adding the lemongrass, ginger, cardamom, cloves, and cinnamon stick. Allow these spices to infuse the broth with their aroma and flavor. -
Prepare the Spice Paste:
