Soto Bening Ayam Recipe

Ingredients

Main Ingredients:

  • 1/2 kg chicken breast

Spice Paste (Bumbu Halus):

  • 4 cloves garlic
  • 3 shallots
  • 1 teaspoon white pepper
  • 1 teaspoon coriander seeds
  • 1 inch turmeric
  • 1 inch ginger
  • 3 candlenuts

Complementary Spices (Bumbu Pelengkap):

  • 1 inch galangal, crushed
  • 2 kaffir lime leaves
  • 1 stalk lemongrass, crushed
  • 2 bay leaves
  • 1 stalk green onion, tied into a knot
  • 1 tomato, cut into wedges

Additional Ingredients:

  • 1/2 kg potatoes
  • Bean sprouts
  • Celery leaves
  • Fried shallots
  • Pickled cucumber (acar timun)

Instructions

  1. Prepare the Chicken:

    • Wash the chicken breast thoroughly.
    • Boil the chicken in boiling water for 5 minutes, then discard the water.
    • After cleaning the chicken, boil it again in fresh water for the soup, adding salt, and cook for approximately 20 minutes.
  2. Make the Spice Paste:

    • Blend all the ingredients for the spice paste (bumbu halus) until smooth.
    • Sauté the spice paste until fragrant, then add the complementary spices (bumbu pelengkap: galangal, kaffir lime leaves, lemongrass, bay leaves) and continue to sauté until aromatic.
    • Add the sautéed spice mixture into the boiling chicken soup.
    • Add the tied green onion and tomato wedges. Cook until the soup reaches a boil.
    • Adjust the seasoning to taste with salt, sugar, and any desired flavor enhancers like chicken bouillon powder.
  3. Prepare the Complementary Ingredients:

    • Remove the chicken from the soup, drain, and let it cool slightly.
    • Fry the chicken until golden brown, then shred it into bite-sized pieces.
    • Slice the potatoes thinly and fry until crispy.
    • Blanch the bean sprouts and thinly slice the celery leaves.
  4. Serve:

    • Place rice in a bowl and arrange the shredded chicken, fried potatoes, bean sprouts, and celery leaves on top.
    • Pour the hot broth over the ingredients.
    • Garnish with fried shallots, and serve with pickled cucumber, sambal, and a squeeze of lemon or lime juice for added zest.
