1 Melt the chocolate.
2 Remove from heat.
3 Add the sugar, and beat in the beaten eggs.
4 Let cool.
5 Add nuts and marshmallows.
6 Spread coconut onto wax paper and place one tsp of mixture onto coconut.
7 Cool.
8 Roll into balls.
9 Chill.

Directions:

  1. Begin by melting the chocolate chips in a heatproof bowl over simmering water, stirring occasionally until smooth and completely melted.

  2. Once the chocolate has melted, remove it from the heat and set it aside to cool slightly.

  3. In a separate mixing bowl, combine the icing sugar and beaten egg until well incorporated.

  4. Gradually add the melted chocolate to the sugar and egg mixture, stirring continuously until smooth and evenly combined.

  5. Allow the mixture to cool for a few minutes until it’s no longer warm to the touch.

  6. Next, fold in the chopped pecans and marshmallows until they’re evenly distributed throughout the chocolate mixture.

  7. Prepare a clean surface lined with wax paper, and spread a layer of coconut onto it.

  8. Using a teaspoon, scoop out portions of the chocolate mixture and drop them onto the coconut-covered wax paper.

  9. Let the chocolate drops cool and firm up for a few minutes until they hold their shape.

  10. Once cooled, gently roll each chocolate drop into a ball, ensuring that they’re evenly coated with coconut.

  11. Place the chocolate balls in the refrigerator to chill for about 15 minutes or until firm.

  12. Once chilled, serve and enjoy these delightful Chocolate Horses, a timeless Canadian treat that’s perfect for any occasion!
