Description:

Appams are delightful leavened rice pancakes from India, known for their light, spongy texture and slightly sweet flavor. Traditionally made with freshly extracted coconut milk and toddy, this simplified version maintains the authentic taste, thanks to a recipe shared by Sagar Aunty, ensuring you get the true essence of this dish.

Ingredients:

  • 2 cups raw rice
  • 1/2 coconut, grated
  • 1 cup cooked rice
  • 1 cup milk, boiling hot
  • 2-3 tablespoons sugar
  • Salt to taste
  • 1 teaspoon dry active yeast or baking soda

Instructions:

  1. Preparation:

    • Soak the raw rice in water for 3-4 hours.
    • Scrape and grate the coconut.
  2. Grinding the Batter:

    • In a blender, grind the soaked rice, grated coconut, and cooked rice into a very fine paste. The texture should be smooth and creamy.
  3. Fermentation:

    • Transfer the ground mixture into a large bowl.
    • Add boiling hot milk, sugar, salt, and yeast (or baking soda). Mix well until everything is incorporated. Add more milk if needed to achieve a pourable batter consistency.
    • Cover the bowl and let it ferment overnight or for at least 8 hours at room temperature. The batter should rise and become slightly fluffy.
  4. Cooking the Appams:

    • Heat a non-stick wok (kadhai) over medium heat.
    • Pour a ladleful of the batter into the center of the wok.
    • Quickly swirl the wok around so that the batter spreads evenly into a thin layer, forming a pancake about 6-8 inches in diameter.
    • Cover the wok and cook the appam on medium heat until the bottom is light brown and the top is set and spongy. The edges will appear lacy, and the center will be thick and soft, resembling an idli.
  5. Serving:

    • Serve the appams warm with a variety of accompaniments. Traditional options include coconut milk sweetened with jaggery and powdered cardamom, or pair them with savory dishes like chicken or mutton stew prepared in Indian style with coconut milk.
    • For a different twist, try serving them with maple syrup or enjoy them plain, as they are loved by kids too.
