Instructions:
- To make the coconut banana bread, start by placing the ripe bananas in a large mixing bowl. Mash them until smooth.
- Add the brown sugar to the mashed bananas and mix well to incorporate.
- Pour in the coconut oil, blending it thoroughly into the mixture.
- Gradually sift in the all-purpose flour and baking powder. Use a whisk to combine the dry ingredients with the wet ones until the batter is smooth and lump-free.
- Stir in the dark chocolate chips for a delightful burst of sweetness in each bite.
- Grease a 20×11 cm loaf pan with coconut oil and lightly dust it with flour to prevent sticking. Pour the banana bread batter into the prepared pan.
- Top the batter with shredded coconut and a sprinkle of dehydrated coconut flakes. If desired, add a handful of mixed dried fruit for extra texture and flavor.
- Bake in a preheated oven at 180°C (350°F) for approximately 45-50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Once baked, remove the banana bread from the oven and allow it to cool in the pan for a few minutes.
- After cooling, gently remove the bread from the pan, slice, and enjoy your moist, flavorful coconut banana bread!
