Beef and Tofu in Coconut Milk

This flavorful Indonesian dish, Daging Sapi & Tahu Masak Santan, combines tender beef and tofu simmered in a rich and aromatic coconut milk sauce. Perfect for a hearty meal, this dish is sure to be a hit at your dining table. Here’s a step-by-step guide to recreating this delightful recipe.

Ingredients:

  • 300 grams beef (cleaned and cut into bite-sized pieces)
  • 4 pieces of tofu (cut into cubes, size as desired)
  • 2 stalks lemongrass (bruised)
  • 1 bay leaf
  • 2 kaffir lime leaves
  • Red chili peppers (whole, to taste)
  • 1 teaspoon beef bouillon powder
  • Salt and sugar (to taste)
  • 65 ml coconut milk (from a can, such as Kara)
  • Beef broth (as needed, to adjust the consistency)

For the Spice Paste:

  • 2 large cloves garlic
  • 5 large shallots
  • 4 red curly chilies
  • 7 red or orange bird’s eye chilies
  • 2 candlenuts
  • 2 cm ginger
  • 2 cm galangal
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon black pepper powder

Instructions:

  1. Prepare the Beef:

    • Boil the beef in water for about 15 minutes until tender. Remove from the pot, let it cool, and then cut into bite-sized pieces. Set aside.
  2. Make the Spice Paste:

    • Blend the garlic, shallots, red curly chilies, bird’s eye chilies, candlenuts, ginger, and galangal into a smooth paste. You can use a food processor or mortar and pestle for this.
  3. Cook the Spice Paste:

    • Heat some oil in a pan over medium heat. Add the spice paste along with the bay leaf, bruised lemongrass, and kaffir lime leaves. Sauté until the paste is fragrant and the oil starts to separate from the paste.
  4. Add the Broth:

    • Pour in the beef broth, adjusting the amount to achieve your desired consistency of the sauce. Bring it to a gentle simmer.
  5. Combine Ingredients:

    • Add the tofu cubes and beef pieces to the pan. Stir well to combine and cook for about 10 minutes, allowing the flavors to meld together.
  6. Season the Dish:

    • Season with beef bouillon powder, salt, and sugar according to your taste preferences. Mix well.
  7. Add the Coconut Milk:

    • Pour in the coconut milk and stir to combine. Allow the dish to simmer gently until the sauce thickens and is well-blended. Be careful not to let it boil too hard to prevent the coconut milk from curdling.
  8. Serve:
