Coconut Beef Meatballs with Lemongrass and Galangal

Beef Meatballs in Coconut Sauce (Bistik Bola Daging Sapi)

Ingredients:

  • 250 grams beef (minced)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tapioca flour
  • 1 large potato
  • For the seasoning:
    • 2 cloves garlic
    • 4 shallots
    • 2 stalks lemongrass
    • 3 cm galangal
    • 1/2 tomato
    • 100 ml coconut milk
    • Salt, to taste
    • Pepper, to taste
    • Sweet soy sauce, to taste
    • Sugar, to taste

Instructions:

  1. Prepare the Beef Mixture:

    • Use a blender or food processor to finely grind the beef. Transfer the ground beef to a bowl.
    • Add the all-purpose flour and tapioca flour to the beef. Mix well, adding a little water if needed to achieve a dough-like consistency. Season with salt and pepper to taste. Stir until well combined.
  2. Cook the Meatballs:

    • Bring a pot of water to a boil. Using a spoon, scoop out small portions of the beef mixture and drop them into the boiling water. Cook until the meatballs float to the surface. Remove the meatballs with a slotted spoon and drain them.
  3. Prepare the Potato:

    • Peel and dice the potato into small cubes. Fry the potato cubes briefly until golden brown, then set aside.
  4. Make the Sauce:

    • Blend the shallots and garlic into a smooth paste. Heat a little oil in a pan and sauté the paste until fragrant.
    • Add the bay leaves, lemongrass, and galangal, which have been lightly smashed. Pour in some water and bring to a simmer.
    • Add the cooked meatballs and fried potato cubes to the pan. Allow it to cook until the flavors meld together.
    • Add the sweet soy sauce, chopped tomato, sugar, salt, and pepper to taste. Adjust the seasoning according to your preference.
    • Stir in the coconut milk and continue cooking until the sauce slightly thickens.
  5. Serve:

    • Once the sauce has thickened and the flavors are well combined, remove from heat.
