Beef Meatballs in Coconut Sauce (Bistik Bola Daging Sapi)
Ingredients:
- 250 grams beef (minced)
- 2 tablespoons all-purpose flour
- 2 tablespoons tapioca flour
- 1 large potato
- For the seasoning:
- 2 cloves garlic
- 4 shallots
- 2 stalks lemongrass
- 3 cm galangal
- 1/2 tomato
- 100 ml coconut milk
- Salt, to taste
- Pepper, to taste
- Sweet soy sauce, to taste
- Sugar, to taste

Prepare the Beef Mixture:
- Use a blender or food processor to finely grind the beef. Transfer the ground beef to a bowl.
- Add the all-purpose flour and tapioca flour to the beef. Mix well, adding a little water if needed to achieve a dough-like consistency. Season with salt and pepper to taste. Stir until well combined.

Cook the Meatballs:
- Bring a pot of water to a boil. Using a spoon, scoop out small portions of the beef mixture and drop them into the boiling water. Cook until the meatballs float to the surface. Remove the meatballs with a slotted spoon and drain them.

Prepare the Potato:
- Peel and dice the potato into small cubes. Fry the potato cubes briefly until golden brown, then set aside.

Make the Sauce:
- Blend the shallots and garlic into a smooth paste. Heat a little oil in a pan and sauté the paste until fragrant.
- Add the bay leaves, lemongrass, and galangal, which have been lightly smashed. Pour in some water and bring to a simmer.
- Add the cooked meatballs and fried potato cubes to the pan. Allow it to cook until the flavors meld together.
- Add the sweet soy sauce, chopped tomato, sugar, salt, and pepper to taste. Adjust the seasoning according to your preference.
- Stir in the coconut milk and continue cooking until the sauce slightly thickens.
