Granulated sugar 125g
Coconut milk 100g
Coconut oil 90g
Eggs 120g

Instructions:

  1. Prepare the Coconut Oil: Start by placing the coconut oil in a small saucepan over low heat, allowing it to melt.

  2. Mix the Dry Ingredients: In a separate bowl, sift together the all-purpose flour and baking powder.

  3. Combine Wet Ingredients: In the bowl of a stand mixer fitted with the paddle attachment, add the granulated sugar. Crack in the eggs and mix for a couple of minutes until light and fluffy. Add the coconut milk to the mixture and continue mixing until well combined.

  4. Add Dry Ingredients: Turn off the stand mixer and add the sifted flour and baking powder mixture into the wet ingredients. Gently fold everything together to form a smooth batter.

  5. Incorporate the Berries: Add the raspberries and blueberries into the batter, carefully folding them in to avoid crushing the delicate fruits.

  6. Fill the Donut Molds: Transfer the batter into a piping bag and carefully fill the donut molds, ensuring they are filled to half their height. This allows room for the donuts to rise and bake evenly.

  7. Bake the Donuts: Preheat the oven to 180ยฐC (350ยฐF) in static mode. Place the donut molds in the center of the oven and bake for approximately 25 minutes or until they are golden and a toothpick inserted comes out clean.

  8. Cool and Serve: Once baked, remove the donuts from the oven and let them cool for a few minutes. Once cool, dust them lightly with powdered sugar for a finishing touch.
