Directions

  1. Prepare the Coffee: Begin by making the coffee with a moka pot, and set it aside to cool slightly.
  2. Separate the Eggs: Separate the egg whites from the yolks, placing them in two separate bowls. In one bowl, beat the egg whites with 20g of sugar until stiff peaks form. Set the whipped egg whites aside.
  3. Cream the Butter and Sugar: In a separate large bowl, cream the softened butter using electric beaters. Gradually add the remaining 120g of sugar, beating until the mixture becomes light and fluffy.
  4. Add the Egg Yolks: One at a time, incorporate the egg yolks into the butter-sugar mixture, ensuring each yolk is fully combined before adding the next.
  5. Sift Dry Ingredients: Sift the flour and baking powder together and add them into the butter mixture, stirring until well combined.
  6. Add Milk: Stir in the milk, and mix until smooth. Once the milk is incorporated, switch to a spatula to gently fold in the stiffly beaten egg whites in two stages. The first addition will soften the mixture, while the second will add airiness, so be gentle as you fold to preserve the fluffiness of the egg whites.
  7. Divide the Batter: Divide the batter evenly into two bowls. In one bowl, pour in the cooled coffee and gently mix until well incorporated. In the second bowl, add the shredded coconut, and stir to combine.
  8. Prepare the Baking Pan: Grease and line a 20 cm (8-inch) round cake pan with parchment paper.
