Crispy Coconut Fried Chicken (Ayam Goreng Serundeng)
Ingredients:
- 1 kg chicken, cut into pieces
- 1/3 grated coconut
- 1 tbsp fried chicken seasoning
- 2 segments turmeric
- 4 segments galangal
- 3 bay leaves
- 1 stalk lemongrass
- 4 cloves garlic
- 2 shallots
- 2 lemons
- 1 tsp salt
Instructions:

Clean the chicken pieces thoroughly. Rub them with lemon juice and let them sit to tenderize.

Grind together the shallots, garlic, and turmeric. Grate the galangal and then grind it finely.

In a large frying pan, combine the chicken, ground spices, bay leaves, lemongrass, grated coconut, salt, and 1/2 cup of water. Stir well (be cautious with the amount of water as the chicken will release its own juices).

If not using grated coconut, reduce the amount of salt since the fried chicken seasoning is already salty.

Cook over medium heat until the liquid evaporates. Adjust seasoning to taste.

Fry the chicken until golden brown. Any leftover chicken can be stored in the refrigerator for later use.
