Instructions:

  1. Prepare the Rice:

    • Heat 1 tsp of coconut oil in a pressure cooker over medium heat. Add 4 cloves of garlic (finely chopped) and sauté for about 40 seconds until the garlic turns light brown and fragrant.

    • Add the 4 cloves of garlic (chopped straight across) and 2 tbsp of desiccated coconut. Stir occasionally and cook for about 3-4 minutes until the garlic turns crispy and golden, and the coconut becomes lightly toasted and fragrant.
  3. Finish and Serve:

    • Once the rice is cooked and the pressure has released, carefully fluff the rice with a fork and transfer it to a serving plate.
    • Pour the crispy garlic and coconut mixture over the rice, giving it an added burst of flavor and texture.
