Instructions:

Marinate the Fish:
- In a bowl, combine fresh lemon juice, 1 tsp salt, and the grouper fish. Allow it to marinate outside the refrigerator for about 10 minutes.

Prepare Ingredients:
- Seed, core, and chop the tomatoes into cubes.
- Slice the onion and mince the jalapeños.

Make the Coconut Curry Paste:
- In a blender, puree garlic cloves, ginger slices, coconut milk, ground coriander, ground cumin, brown sugar, black pepper, turmeric, and cayenne pepper until smooth.

Cook Onions and Tomatoes:
- Heat canola oil in a pot over medium heat.
- Cook the sliced onion until golden brown.
- Add the chopped tomatoes and cook for about 5 minutes until softened.

Simmer the Curry:
- Stir in the prepared coconut curry paste into the pot with onions and tomatoes.
- Add minced jalapeños, water, and the remaining 3/4 tsp salt. Bring the mixture to a simmer.

- Gently place the marinated grouper fish into the simmering curry.
- Pour in 1 tbsp of the marinade over the fish.
- Let the stew simmer until the fish is cooked through.
