Curried Fish Stew, Goan Style

Ingredients:

2 grouper
1/4 cup fresh lemon juice
1 3/4 tsp salt
2 garlic cloves
4 slices ginger
1 cup coconut milk
1 tsp ground coriander
1 tsp ground cumin
1 tbsp brown sugar
1/2 tsp black pepper
1/4 tsp turmeric
1 tsp cayenne pepper
1-4 onion
1 tomato
2 cups water
3/4 tbsp canola oil

Instructions:

  1. Marinate the Fish:

    • In a bowl, combine fresh lemon juice, 1 tsp salt, and the grouper fish. Allow it to marinate outside the refrigerator for about 10 minutes.
  2. Prepare Ingredients:

    • Seed, core, and chop the tomatoes into cubes.
    • Slice the onion and mince the jalapeños.
  3. Make the Coconut Curry Paste:

    • In a blender, puree garlic cloves, ginger slices, coconut milk, ground coriander, ground cumin, brown sugar, black pepper, turmeric, and cayenne pepper until smooth.
  4. Cook Onions and Tomatoes:

    • Heat canola oil in a pot over medium heat.
    • Cook the sliced onion until golden brown.
    • Add the chopped tomatoes and cook for about 5 minutes until softened.
  5. Simmer the Curry:

    • Stir in the prepared coconut curry paste into the pot with onions and tomatoes.
    • Add minced jalapeños, water, and the remaining 3/4 tsp salt. Bring the mixture to a simmer.
  6. Add the Fish:

    • Gently place the marinated grouper fish into the simmering curry.
    • Pour in 1 tbsp of the marinade over the fish.
    • Let the stew simmer until the fish is cooked through.
  7. Serve:

    • Once the fish is cooked, serve the Curried Fish Stew hot, garnished with fresh cilantro leaves if desired.
