Instructions:
1. Prepare Lemon Mixture:
- Grate the zest from 2 large or 3 medium lemons, then squeeze the lemons to obtain 1/2 cup of lemon juice.
- Combine the lemon juice and agar flakes in a small saucepan (for stove method) or a 2-cup heatproof measuring cup (for microwave method). Let it sit for 15 minutes until the agar softens.
2. Preheat and Prep:
- Preheat your oven to 350ยฐF.
- Grease an 8×8 baking pan.
3. Make Crumb Base:
- In a medium bowl, whisk together the all-purpose flour and 1/4 cup of raw sugar.
- Cut the margarine into small chunks and add it to the flour mixture. Use a pastry cutter to blend until it resembles small crumbs.
- Press the crumb mixture evenly into the prepared baking pan.

4. Prepare Lemon Filling:

- Lightly press toasted coconut onto the surface of the cooled filling.
- Allow the pan to sit at room temperature for about 1 hour to let the mixture set completely.
