Instructions

Step 1: Prepare the crust
Begin by preheating your oven to 325°F (165°C). Lightly grease an 8-inch square baking pan with butter and dust it with flour, tapping out any excess. This will help your squares come out easily after baking.

In a medium mixing bowl, combine the 3/4 cup of all-purpose flour, 6 tbsp of softened butter, 1/3 cup of sweetened flaked coconut, 1/4 cup of confectioners’ sugar, and 1/4 tsp of salt. Using your fingertips, rub the mixture together until it resembles a coarse meal. Once combined, evenly press this mixture into the prepared pan, making sure to cover the entire bottom of the pan.

Place the pan in the preheated oven and bake for 25-30 minutes, or until the crust turns golden brown. While it bakes, reduce the oven temperature to 300°F (150°C) in preparation for the filling.

Step 2: Make the lime filling
In a separate mixing bowl, whisk together the 4 large eggs and 1 cup of granulated sugar until smooth and combined. Add 2 tbsp of all-purpose flour, 1/3 cup of fresh lime juice, and 1 tsp of fresh lime zest. Stir until the mixture is well combined and smooth.

Once the crust is done, remove the pan from the oven and pour the lime filling over the hot crust. Use a spatula to spread it evenly across the surface.

Step 3: Bake the squares
Return the pan to the oven and bake the squares at 300°F for 20 minutes, or until the filling is mostly set but still slightly jiggly in the center.

Step 4: Add the coconut topping
Remove the pan from the oven and sprinkle the 1/3 cup of sweetened flaked coconut over the top of the custard. Return the pan to the oven for an additional 5-10 minutes, or until the coconut is golden and the filling is fully set.

Step 5: Cool and chill
Allow the pan to cool completely on a wire rack. Once cool, cover the pan and place it in the refrigerator to chill for at least 1 hour. This helps the squares firm up and makes them easier to cut.

Step 6: Cut and serve
After chilling, use a sharp knife to cut the coconut-lime squares into 16 even squares, each about 2 inches in size. Serve chilled and enjoy the delightful combination of coconut and lime.

Tips for Success

  • For an extra citrusy punch, you can add a bit more lime zest to the filling.
  • Ensure the crust is golden and crisp before adding the filling for the best texture.
  • You can also experiment by adding a small amount of toasted coconut on top for added flavor and texture.
  • These coconut-lime squares can be stored in an airtight container in the fridge for up to a week.

Enjoy making these sweet, tangy Coconut-Lime Squares for your next dessert craving! Whether you’re serving them at a family gathering or enjoying them as a midday snack, they are sure to be a hit with everyone!
