Ingredients:

2 Garlic cloves
4 tsp Garam masala
1 1/2 tsp Curry powder
1 1/2 tsp Ground coriander
1 1/2 tsp Turmeric
1 tsp Cayenne pepper
1 can (14.5 oz) Diced tomatoes
1 cup Plain yogurt
1 lb Large shrimp
2 cups Unsweetened coconut milk
1/4 cup Chopped cilantro
1/2 cup Sliced green onion tops
1 tbsp Fresh lemon juice
To taste Salt and pepper

Instructions:

  1. Sauté Onions: Heat oil in a large nonstick skillet over medium heat. Add onions and sauté until deep golden, approximately 20 minutes.

  2. Add Spices: Add minced garlic and all the spices (garam masala, curry powder, ground coriander, turmeric, cayenne pepper) to the skillet. Sauté for 1 minute until fragrant. Allow the mixture to cool to lukewarm.

  3. Prepare Masala: In a food processor, puree diced tomatoes with their juice and plain yogurt until almost smooth. Add the cooled onion-spice mixture and continue to puree until almost smooth. Season the masala with salt and pepper to taste.

  4. Cook Shrimp: Heat oil in a heavy large deep skillet over medium-high heat. Add the large shrimp and sauté until partially cooked, about 2 minutes.

  5. Combine Ingredients: Stir in the unsweetened coconut milk, chopped cilantro, sliced green onions, fresh lemon juice, and the prepared masala mixture.

  6. Simmer: Allow the mixture to simmer for about 3 minutes, allowing the flavors to meld together and the shrimp to finish cooking.

  7. Season and Serve: Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with additional cilantro or sliced green onions if desired.
