Red Chilli powder 1/2 teaspoon
Cumin powder (Jeera) 1/2 teaspoon
Coriander Powder (Dhania) 1/2 teaspoon
Garam masala powder 1 teaspoon
Coconut milk 2 cups
Water 1 1/2 cups
Salt To taste
Coriander (Dhania) Leaves Small bunch, finely chopped
Mint Leaves (Pudina) Small bunch, finely chopped

Instructions

  1. Boil the Eggs:
    Begin by boiling the eggs until they are hard-boiled (around 8-10 minutes). Once boiled, peel the eggs and set them aside.

  2. Prepare the Rice:
    Rinse the rice thoroughly in cold water until the water runs clear. Drain the rice and set it aside.

  3. Cook the Spices:
    In a large pot or pressure cooker, heat 1 tablespoon of oil or ghee. Add the bay leaf, cardamom pods, cloves, and black peppercorns. Sauté the whole spices for about a minute, allowing them to release their aromatic flavors.

  4. Sauté the Onions and Tomatoes:
    Add the thinly sliced onions and sauté until they turn golden brown. Add the minced garlic and ginger and cook for another minute, stirring constantly. Then add the diced tomatoes and cook until the tomatoes soften.

  5. Add the Ground Spices:
    Add turmeric powder, red chilli powder, cumin powder, coriander powder, and garam masala powder to the onion-tomato mixture. Stir well and cook for 2-3 minutes, allowing the spices to release their fragrance.

  6. Cook the Rice with Coconut Milk:
    Add the rinsed rice to the pot and stir gently to coat the rice with the spice mixture. Pour in the coconut milk and water. Season with salt to taste. Bring the mixture to a boil. Once it starts boiling, reduce the heat to low and cover the pot. Allow the rice to cook for 15-20 minutes or until the rice is tender and the liquid has been absorbed.

  7. Prepare the Eggs:
    While the rice is cooking, make small slits in the boiled eggs. This will allow the spices to penetrate the eggs and enhance their flavor. Gently fry the eggs in a pan with a little oil until the surface becomes slightly golden and crispy.

  8. Assemble the Biryani:
    Once the rice is cooked, gently fluff it with a fork. Layer the fried boiled eggs on top of the rice. Cover the pot again and let it sit for another 10-15 minutes on low heat to allow the flavors to meld together.

  9. Garnish:
