Ingredients:

  • 3 potatoes
  • 1/2 cup green peas
  • 2 cucumbers

  • 1 cauliflower floret
  • 1 tomato
  • 1/4 cup ghee
  • 2 teaspoons mustard seeds
  • 2 green chilies
  • 1 teaspoon cumin seeds
  • A handful of curry leaves
  • Flesh of 2 fresh coconuts
  • Salt to taste
  • 3/4 inch ginger
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare Coconut Milk:

    • Start by adding a cup of water to the grated coconut and grind it in a mixer until smooth.
    • Pass the mixture through a sieve to separate the pulp from the coconut milk.
    • Squeeze out the pulp thoroughly and keep the coconut milk extract aside.
  2. Prep Vegetables:

    • Peel and cut the potatoes, carrot, and cucumber into bite-sized pieces. Set aside.
    • Grate the tomatoes, discard the skin, and keep the pulp aside.
  3. Microwave Vegetable Mix:

    • In a deep microwaveable dish, combine the potatoes, carrot, cucumber, cauliflower, green peas, green chilies, ginger-coriander paste, coconut milk, and grated tomatoes.
    • Cover the dish and microwave on HIGH for 17 minutes, stirring once halfway through.
    • Allow it to stand for 2 minutes, then add salt to taste and mix well.
  4. Seasoning:

    • In a frying pan, heat the ghee and add mustard seeds, cumin seeds, and curry leaves. Let them splutter and release their aroma.
    • Pour the seasoning over the vegetable mixture and mix thoroughly.
