Ingredients:

Quantity Ingredient
3 cups Flour
2 tsp Baking Powder
1/2 tsp Salt
1 cup Butter
2 cups Sugar
1 tsp Vanilla Extract
1 cup Milk
8 Egg Whites
1 1/4 cups Sugar
2 tbsp Bourbon
1 cup Pecans
3/4 cup Raisins
8 oz Flaked Coconut
2 cups Sweetened Flaked Coconut
1 1/2 cups Pecan Halves

Instructions:

  1. Preheat your oven to 325°F (165°C).

  2. Prepare three 9-inch diameter cake pans by buttering and flouring them.

  3. In a medium bowl, mix together the flour, baking powder, and salt.

  4. In a large bowl, use an electric mixer to beat together the butter and 1 3/4 cups of sugar until creamy.

  5. Add vanilla extract to the butter mixture and beat until well combined.

  6. Gradually add the dry ingredients mixture to the butter mixture, alternating with milk, and beat until smooth.

  7. In another large bowl, beat the egg whites until soft peaks form.

  8. Slowly add in 1/4 cup of sugar while continuing to beat the egg whites.

  9. Continue beating until stiff but not dry.

  10. Carefully fold the beaten egg whites into the cake batter.

  11. Divide the batter evenly among the prepared cake pans, smoothing the tops with a spatula.

  12. Bake the cakes in the preheated oven for about 35 minutes, or until a toothpick inserted into the center comes out clean.

  13. Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.

  14. In a heavy large saucepan, melt the butter over medium heat.

  15. Whisk together the remaining 1 1/4 cups of sugar, bourbon, and egg yolks in a medium bowl.

  16. Gradually whisk in the melted butter.

  17. Return the mixture to the saucepan and whisk over medium heat until very thick, about 6 minutes.

  18. Mix in the chopped pecans, raisins, and 1 1/2 cups of flaked coconut.

  19. Chill the filling until cold, approximately 1 hour.

  20. Place one of the cake layers on a serving platter.

  21. Spread 1/3 of the chilled filling over the cake layer, then top with the second cake layer.

  22. Repeat the process by spreading another 1/3 of the filling over the second cake layer, then topping it with the third cake layer.

  23. Spread the remaining filling over the top of the cake, leaving the sides exposed.

  24. Sprinkle additional coconut in a 1-inch border around the top edge of the cake.

  25. Garnish the cake with pecan halves for an elegant finishing touch.

  26. For optimal flavor, this cake can be prepared up to 1 day in advance. Simply let it sit at room temperature for 2 hours before serving.

Enjoy the heavenly amalgamation of flavors with every bite of this Amalgamation Cake! Perfect for satisfying your sweet cravings and impressing your guests, this recipe is a must-try for any dessert lover. 🍰✨
