Coconut Baked Fish Recipe

Ingredients:

  • 2 salmon fillets
  • 4 tablespoons fresh lemon juice
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1-2 green chili peppers, finely chopped
  • 1 fresh tomato, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon fennel seeds
  • 1/2 teaspoon salt
  • 1 1/4 cups canned unsweetened coconut milk
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons cooking oil (for frying)
  • Cooking spray or additional oil (for baking dish)

Instructions:

  1. Prepare the Fish:

    • Cut the salmon fillets crosswise into strips about 2 inches wide.
    • Rub the fish with 2 tablespoons of lemon juice and let it marinate in the refrigerator for 1 hour.
  2. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
  3. Prepare the Sauce:

    • Heat 2 tablespoons of cooking oil in a medium frying pan over medium-high heat.
    • Add the chopped onions and fry until the edges are nicely browned.
    • Stir in the minced garlic, grated ginger, and chopped green chili peppers. Cook for about 2 minutes until fragrant.
    • Add the chopped tomatoes, ground coriander, ground cumin, black pepper, turmeric, fennel seeds, and salt. Stir well and cook until the tomatoes break down and form a thick paste.
    • Pour in the coconut milk, reduce the heat, and simmer for about 5 minutes until the sauce thickens.
  4. Bake the Fish:

    • Lightly grease an ovenproof baking dish with cooking spray or oil.
    • Arrange the marinated fish strips in a single layer in the baking dish.
    • Bake the fish, uncovered, in the preheated oven for 10 minutes.
  5. Finish Cooking:

    • Remove the dish from the oven and carefully pour the prepared coconut sauce over the fish.
    • Cover the baking dish tightly with aluminum foil.
    • Return the dish to the oven and bake for an additional 15 to 20 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Serve:

    • Garnish the coconut baked fish with chopped fresh cilantro before serving.
    • Serve hot, accompanied by steamed rice to enjoy with the flavorful coconut sauce.
