Coconut Baked Fish Recipe

Ingredients:
- 2 salmon fillets
- 4 tablespoons fresh lemon juice
- 2 onions, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1-2 green chili peppers, finely chopped
- 1 fresh tomato, chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon fennel seeds
- 1/2 teaspoon salt
- 1 1/4 cups canned unsweetened coconut milk
- 1/4 cup chopped fresh cilantro
- 2 tablespoons cooking oil (for frying)
- Cooking spray or additional oil (for baking dish)
Instructions:

Prepare the Fish:
- Cut the salmon fillets crosswise into strips about 2 inches wide.
- Rub the fish with 2 tablespoons of lemon juice and let it marinate in the refrigerator for 1 hour.

- Bake the fish, uncovered, in the preheated oven for 10 minutes.

- Remove the dish from the oven and carefully pour the prepared coconut sauce over the fish.
- Cover the baking dish tightly with aluminum foil.
- Return the dish to the oven and bake for an additional 15 to 20 minutes, or until the fish is opaque and flakes easily with a fork.
