Ingredients:

3 cups Grated Coconut
1/2 cup Cream
1 tsp Cardamom Powder
1 cup Sugar
1 cup Saffron Milk
Green Food Coloring

Instructions:

  1. In a heavy-bottomed vessel, combine milk, cream, and grated coconut over medium heat.
  2. Stir the mixture occasionally until it begins to thicken.
  3. Add sugar to the mixture and continue stirring.
  4. Reduce the flame to low and cook, stirring continuously, until the mixture thickens and starts to leave the sides of the vessel.
  5. Once thickened, remove the vessel from heat and let it cool slightly.
  6. Divide the mixture into two equal parts in separate bowls.
  7. To one part, add a few drops of green food coloring and half of the cardamom powder. Mix well to incorporate the color.
  8. Lightly grease a deep metal plate and spread the green mixture evenly on it. Press it down gently to form an even layer.
  9. In the other part of the mixture, place the vessel back on medium heat.
  10. Add saffron milk to the mixture and stir until you achieve a uniform yellow color.
  11. While stirring, add the remaining cardamom powder to enhance the flavor.
  12. Spread the yellow mixture on top of the green layer in the plate, making sure to cover it completely.
  13. Use the back of a spoon to smooth out the surface of the barfi and make it even.
