Coffee and Cardamom Truffles

Fresh brewed coffee 50ml
Ground coffee 2 teaspoons
Ground cardamom 1 teaspoon

Instructions

To begin, prepare the coffee. Fill your coffee maker’s base with cold water (preferably low-calcium water) and make sure not to exceed the safety valve. Assemble the coffee maker tightly so that no coffee spills out as it brews. Set it on a low and steady flame to brew a rich, full-bodied coffee. You will see a thick foam forming as the coffee rises. Once ready, set the coffee aside to cool.

Next, finely chop both the dark and milk chocolate using a sharp knife. Add the butter and ground cardamom, then mix everything together with a spoon. Gently heat this mixture until the chocolate and butter are fully melted. Once melted, pour in the freshly brewed coffee and stir until everything is well incorporated.

Transfer the mixture into a large bowl containing the chopped chocolate. Use a whisk to mix thoroughly, ensuring all ingredients are blended smoothly.

Cover the bowl with plastic wrap, making sure it touches the surface of the mixture to avoid air pockets. Allow it to chill in the refrigerator until the chocolate mixture has hardened, which will take about 2-3 hours.

Once the mixture has set, sift the cocoa powder into a small bowl to make it easier to roll the truffles later. Wet your hands slightly to avoid the mixture sticking, and then scoop small portions of the chocolate mixture to form compact balls. Roll each ball in the cocoa powder and ground coffee mixture (a 19-20 ratio) until fully coated.

Place the finished truffles on a tray lined with parchment paper. Work quickly so the heat from your hands doesn’t soften the mixture too much. Continue rolling until all of the chocolate mixture has been used up—this recipe will yield about 25 truffles.

Allow the truffles to chill for a final 30 minutes before serving. These Coffee and Cardamom Truffles are best enjoyed with a fresh cup of coffee, enhancing the rich flavors of the truffles.
