Instructions:

  1. Prepare the Ganache:
    Begin by finely chopping the dark chocolate. Place the chopped chocolate in a small saucepan and set aside.

  2. Make the Coffee Mixture:
    In a separate pot, pour in the heavy cream and add 15g of the coffee beans. Heat over low to medium heat until the cream starts to simmer, but be careful not to let it boil. Once the cream is hot, pour in the freshly brewed espresso and stir gently with a spatula until the chocolate has completely melted. Continue mixing until the ganache is smooth, shiny, and fully combined.

  3. Chill the Ganache:
    Cover the ganache with plastic wrap, making sure it touches the surface of the mixture to prevent a skin from forming. Allow it to cool and then refrigerate for at least 10 hours (anywhere from 8 to 12 hours is ideal). Remove the ganache from the refrigerator about 2 hours before you plan to use it so that it softens to a spreadable consistency.

  4. Prepare the Coffee Granella:
    Toast 3g of coffee beans in a small pan for a few minutes until they release a fragrant aroma. Once toasted, transfer the beans to a cutting board and crush them into small pieces using a rolling pin or pestle to create a rough coffee granella.

  5. Assemble the Pavesini Sandwiches:
    Once the ganache has softened to room temperature, use a spatula to loosen it and make it smooth again. Transfer the ganache into a piping bag fitted with a star tip (approximately 10 cm in diameter).
    Take one Pavesini biscuit and pipe four small dollops of ganache on the inside (the side without sugar). Sprinkle a pinch of the coffee granella over the ganache.
