Ingredients:

  • 1/2 cup butter
  • 1/2 cup margarine
  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 1 tablespoon instant coffee granules
  • 1 tablespoon warm water
  • 1 egg
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1/4 cup shortening
  • 1 1/2 cups semisweet chocolate chips

Instructions:

  1. In a mixing bowl, cream together the butter, margarine, and sugars until light and fluffy.

  2. Dissolve the instant coffee granules in warm water, then add them to the creamed mixture along with the egg and melted chocolate. Mix well to combine.

  3. In a separate bowl, combine the all-purpose flour, ground cinnamon, and salt. Gradually add this dry mixture to the creamed mixture, stirring until a sticky dough forms.

  4. Shape the dough into two 6-1/2-inch rolls, then wrap each roll in plastic wrap. Refrigerate the wrapped dough for at least 4 hours, or until firm.

  5. Once chilled, unwrap the dough and slice it into 1/4-inch slices. Place the slices 2 inches apart on ungreased baking sheets.

  6. Bake the cookies at 350Β°F (175Β°C) for 10-12 minutes, or until firm and lightly golden around the edges.

  7. Remove the cookies from the oven and transfer them to wire racks to cool completely.

  8. In a small saucepan set over low heat, melt the semisweet chocolate chips with the remaining shortening. Stir until smooth and creamy.
