Instructions:

Preparing the Coffee Pavlova:

  1. Brew the Coffee:

    • Begin by preparing the coffee with a moka pot. Fill the water compartment with cold water, preferably low in calcium, up to the safety valve.
    • Place the coffee grounds into the filter basket without pressing them down. Assemble the moka pot and ensure it’s tightly sealed.
    • Heat the moka pot on the stove until the coffee begins to brew. Set the coffee aside to cool slightly.
  2. Preheat the Oven:

    • Preheat your oven to 250Β°C (482Β°F) in static mode.
  3. Make the Meringue:

    • Take the egg whites out of the fridge and allow them to reach room temperature. Using an electric mixer or stand mixer, whip the egg whites until soft peaks form.
    • In a separate bowl, combine the powdered sugar and cornstarch.
    • Gradually add the sugar-cornstarch mixture to the whipped egg whites, one tablespoon at a time, while the mixer is still running. Continue to whip until the mixture is firm and glossy.
    • Add the apple cider vinegar in two additions and mix until well incorporated.
  4. Shape the Meringue:

    • Line a baking sheet with parchment paper. Transfer the meringue mixture onto the prepared sheet, forming a thick disk with slightly raised edges. This will form the base of your pavlova.
  5. Bake the Meringue:

    • Lower the oven temperature to 120Β°C (250Β°F) and bake the meringue for approximately 1.5 hours. The meringue should turn golden brown and firm on the outside.
    • Once baked, turn off the oven, crack the oven door slightly, and let the meringue cool completely in the oven. This prevents any sudden temperature changes, which could cause cracking.

Making the Chocolate-Coffee Sauce:

  1. Prepare the Sauce:
    • In a small saucepan, heat 50ml of fresh cream over low heat. Once warm, add 50ml of the brewed coffee.
    • Stir to combine and dissolve the dark chocolate into the cream mixture, creating a smooth, glossy sauce. Set aside to cool.

Assembling the Pavlova:

  1. Whip the Cream:

    • In a separate bowl, whip the remaining 400ml of fresh cream with 20g of powdered sugar until stiff peaks form.
  2. Decorate the Pavlova:

    • Spread a generous layer of whipped cream over the cooled meringue base.
    • Drizzle the chocolate-coffee sauce over the top, allowing it to flow beautifully onto the pavlova.
    • For a final touch, garnish with curls of dark chocolate for added texture and flavor.
  3. Serve:
