A great crowd-pleasing meal for anytime of the year, but especially comforting when it’s cold and blustery outside. I like mine served over cooked spaghetti pasta and topped with cheese, or simply in a bowl with some cheese and crackers. Like many others, I enjoy beans in my chili. This recipe even won me $50 in a contest in Colorado! Here’s a handy tip: never, ever add tomatoes to uncooked dry beans. The acidity in the tomatoes prevents the beans from softening. They must be added AFTER the beans are done cooking.

Ingredients:

Quantity Ingredient
1 can Red kidney beans
1/2 cup Dry pinto beans
8 cups Water
1 Onion, chopped
1 clove Garlic, minced
2 tsp Salt
2 tsp Black pepper
2 Bay leaves
2 tsp Oregano, dried
1 tsp Basil, dried
1 tsp Rosemary leaves, dried
1 lb Lean ground beef
1 lb Ground pork
2 cans Green chilies, chopped
2 cans Stewed tomatoes
2 tsp Celery seeds
3 tbsp Chili powder
3 tsp Cumin
1 tsp Crushed red pepper flakes
1 can Beer
1 tbsp Sugar

Instructions:

  1. Prepare Dry Beans:

    • Wash dry beans thoroughly.
  2. Cook Beans:

    • In a large pot, bring 8 cups of water to a simmer.
    • Add the dry kidney beans, pinto beans, chopped onion, minced garlic, salt, black pepper, bay leaves, oregano, basil, and rosemary leaves.
    • Simmer until the beans are tender, about 2 hours. Keep an eye on the water level and add more as needed; dry beans absorb a lot of water.
  3. Prepare Meat:

    • While the beans are cooking, brown the lean ground beef and ground pork in a separate skillet.
    • Drain off any excess fat and set aside.
  4. Combine Ingredients:

    • Once the beans are tender, add the browned beef and pork to the pot.
    • Stir in the green chilies, canned stewed tomatoes with their juice, celery seeds, chili powder, cumin, crushed red pepper flakes, beer, and sugar.
  5. Simmer and Serve:

    • Allow the chili to simmer for an additional 30 minutes to meld the flavors together.
    • Taste and adjust seasoning if needed.
    • Serve hot over cooked spaghetti pasta, topped with cheese, or in a bowl with your favorite chili toppings like crackers and more cheese.
