Recipe: Roasted Bell Peppers Salad 🥗

Description: Christmas time here means Summertime, and I have taken this colorful salad along to get-togethers and barbecues; it’s a really popular addition to the feast. But it would taste just as good in July or August!

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes
  • Servings: 4

Ingredients:

  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 115g feta cheese
  • 1 tablespoon red wine vinegar
  • 1 tablespoon clear honey
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions:

  1. Preparation:

    • Slice all the peppers in half lengthways and deseed.
  2. Roasting the Peppers:

    • Arrange peppers in a single layer, skin side upwards, on a baking sheet.
    • Place them under a hot grill until the skin has blackened and begins to blister.
  3. Peeling the Peppers:

    • Leave to cool slightly, then place in a plastic bag and close the end.
    • When cold, peel off and discard the skin.
  4. Assembling the Salad:

    • Arrange the peppers on a serving platter.
    • Scatter the crumbled feta over them.
  5. Preparing the Dressing:

    • In a small bowl, mix together the red wine vinegar, honey, salt, and freshly ground black pepper.
  6. Final Touch:

    • Drizzle the dressing over the salad.
  7. Chilling:

    • Chill until ready to serve.
