Recipe: Roasted Bell Peppers Salad 🥗
Description: Christmas time here means Summertime, and I have taken this colorful salad along to get-togethers and barbecues; it’s a really popular addition to the feast. But it would taste just as good in July or August!

Ingredients:
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 115g feta cheese
- 1 tablespoon red wine vinegar
- 1 tablespoon clear honey
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions:

Preparation:
- Slice all the peppers in half lengthways and deseed.

Roasting the Peppers:
- Arrange peppers in a single layer, skin side upwards, on a baking sheet.
- Place them under a hot grill until the skin has blackened and begins to blister.

Peeling the Peppers:
- Leave to cool slightly, then place in a plastic bag and close the end.
- When cold, peel off and discard the skin.

Assembling the Salad:
- Arrange the peppers on a serving platter.
- Scatter the crumbled feta over them.

Preparing the Dressing:
- In a small bowl, mix together the red wine vinegar, honey, salt, and freshly ground black pepper.

Final Touch:
- Drizzle the dressing over the salad.

Chilling:
- Chill until ready to serve.
