Savory Pepper and Cheese Tart

Instructions

  1. Prepare the Peppers:
    Begin by preheating the oven to 180ยฐC (350ยฐF). Wash and dry the three bell peppers (red, yellow, and green). Place them on a baking sheet lined with parchment paper. Roast the peppers in the oven for approximately 40 minutes, turning them every 15 minutes to ensure even cooking. The peppers should be tender and slightly charred.

  2. Peel the Peppers:
    Once the peppers are roasted, remove them from the oven and immediately place them in a food-safe plastic bag. Seal the bag and let them cool down for about 15 minutes. The steam will help loosen the skin, making it easier to peel off the skins once cooled.

  3. Prepare the Pepper Filling:
    After peeling the peppers, cut them into 1 cm thick strips. Place the strips into a fine mesh sieve or colander and let them drain for about 30 minutes to remove excess moisture. Transfer the drained peppers into a bowl. Add a pinch of fine salt, a few cracks of black pepper, a drizzle of extra virgin olive oil, and a few leaves of fresh mint. Stir in the balsamic vinegar, mixing everything well. Set aside.

  4. Prepare the Tart Base:
    Unroll the puff pastry sheet on a clean surface and fold it in half lengthwise to form a long rectangle. Line a rectangular tart pan (20×16 cm) with parchment paper. Gently press the folded pastry into the pan, making sure the edges fit neatly along the sides.

  5. Assemble the Tart:
    Grate the Edam cheese using a coarse grater and sprinkle a generous amount over the base of the pastry. Evenly spread the roasted pepper strips on top of the cheese, arranging them in a diagonal pattern with alternating colors to create a colorful and vibrant display.

  6. Bake the Tart:
    Place the tart in the preheated oven and bake for about 25-30 minutes or until the puff pastry is golden and the cheese has melted.

  7. Finishing Touches:
    Once baked, allow the tart to cool for a few minutes before carefully removing it from the pan. Garnish with the remaining mint leaves for a fresh and aromatic touch. Serve warm or at room temperature.
