Mixed Herbs (Dried) 1/2 teaspoon
Salt To taste
Pumpkin Seeds 2 teaspoons
Italian Seasoning 1 teaspoon
Mozzarella Cheese (grated) 1/4 cup
Basil Leaves 5 leaves
Black Olives (sliced) 5 olives

Instructions

  1. Cook the Pasta:

    • Bring 2 cups of water to a boil and add a pinch of salt. Add the Durum Wheat Penne Pasta and cook for 7–8 minutes or until al dente.
    • Once cooked, drain the pasta in a colander and pour 1 cup of cold water over it to stop the cooking process. Set the pasta aside.
  2. Prepare the Spinach:

    • Heat a heavy-bottomed pan with 1 cup of water. Bring it to a boil, add the washed and chopped spinach, and switch off the heat immediately.
    • Drain any excess water from the spinach and set it aside to cool.
  3. Make the Tomato Dressing:

    • Coarsely grind the blanched tomatoes, red chilli, green bell pepper, and garlic using a food processor or mortar and pestle.
    • Heat olive oil in a heavy-bottomed pan and add the ground mixture. Add salt and vinegar, cooking on a low flame for about 7-8 minutes or until the oil separates from the sauce.
    • Sprinkle in the mixed herbs (dried or fresh) and give it a final stir. Remove from heat.
  4. Layer the Salad in a Jar:

    • Take a clean, dry jar (ensure it’s free from odors) and begin layering your ingredients. Start with 1 tablespoon of the tomato dressing at the bottom of the jar.
    • Add chopped yellow bell pepper, followed by a layer of penne pasta, then spinach, and sweet corn. Add red bell peppers on top of the corn layer.
    • Garnish with grated mozzarella cheese, pumpkin seeds, and Italian seasoning. Add a few basil leaves and black olives for extra flavor and texture.
  5. Seal and Store:

    • Seal the jar tightly and refrigerate it until ready to eat. The pasta salad can be stored in the refrigerator for up to 2 days.
  6. To Serve:

    • When you’re ready to enjoy your salad, open the jar and transfer the contents into a wide bowl. Gently toss everything together to combine.
