Spring Eggs – A Colorful Twist on Classic Deviled Eggs
Category: Appetizer
Servings: 24

Ingredients:

Ingredient Quantity
Eggs 12
Cream Cheese 80g
Spinach 200g
Salt To taste
Black Pepper To taste
Extra Virgin Olive Oil 15g
Cream Cheese (for purple filling) 100g
Pre-cooked Beets 100g
Cream Cheese (for red filling) 130g
Tomato Paste 30g
Smoked Paprika 1 pinch
Salt (for red filling) To taste
Black Pepper (for red filling) To taste

Instructions:

1. Boil the Eggs
To begin making these vibrant spring eggs, place the eggs in a saucepan. Cover them completely with cold water. Bring the water to a boil over medium heat, then reduce the heat and let the eggs simmer for 6-8 minutes for hard-boiled eggs. Once cooked, drain the eggs and let them cool completely before peeling.

2. Prepare the Spinach Filling
While the eggs are cooling, rinse and clean the spinach. Set it aside to cool. Once it has cooled, blend the spinach with the cream cheese, adding salt and pepper to taste. The mixture should be smooth and creamy, forming a green filling for your eggs.

3. Make the Purple Beet Filling
Next, prepare the purple beet filling. Peel and chop the pre-cooked beets into small cubes. Place the beets in a food processor or use an immersion blender to puree them. Add a pinch of salt and pepper, and blend until smooth and creamy. This vibrant purple mixture will bring a unique twist to your spring eggs.

4. Prepare the Red Tomato Filling
For the red filling, combine the cream cheese and tomato paste in a small bowl. Stir well, and season with salt and black pepper to taste. If desired, add a pinch of smoked paprika to enhance the flavor with a subtle smokiness.

5. Assemble the Spring Eggs
Once all your fillings are ready, it’s time to assemble the eggs. Start by carefully peeling the cooled eggs. Slice them in half lengthwise and gently remove the yolks. You can discard the yolks or set them aside for a different use. Using a pastry bag (or a simple plastic bag with the tip cut off), pipe the colorful fillings into the hollowed-out egg whites. Fill each egg half with a different color: green for spinach, red for tomato, and purple for beets.

6. Garnish and Serve
Once your spring eggs are filled, feel free to get creative with garnishes. You can decorate them with fresh herbs, a sprinkle of smoked paprika, or even a little grated cheese. These colorful eggs will be a hit at any gathering!

Enjoy these Spring Eggs
Perfect for a party appetizer or a vibrant addition to your spring brunch, these Spring Eggs bring a burst of color and flavor to your table. The creamy spinach, tangy tomato, and earthy beet fillings make for a delightful and unique take on traditional deviled eggs.

By adding these colorful fillings, you can elevate the classic deviled egg into something visually stunning and bursting with fresh flavors. Whether you’re hosting a spring gathering or just looking for a fun, nutritious snack, these Spring Eggs are sure to impress!
