Instructions:

  1. Rice Preparation:

    • Place the short-grain rice and water in a pot, allowing it to soak for at least 1 hour. Overnight soaking is acceptable.
    • Bring the mixture to a boil, cover it, then reduce the heat and let it simmer for 15 minutes.
    • Turn off the heat and let the rice sit for an additional 10 minutes.
    • In a small saucepan, combine rice vinegar with salt, sugar, or honey. Boil the mixture, then remove it from heat and let it cool before use. This step can be done in advance.
    • Transfer the hot rice to a large bowl and gradually mix in the cold vinegar mixture while stirring. Keep the rice covered during the preparation.
  2. Mushrooms:

    • Combine shiitake mushrooms with water, soy sauce, mirin, dry sherry, sugar, and honey in a skillet.
    • Simmer the mixture over low heat for 15 minutes, then drain the mushrooms.
  3. Carrots:

    • In a saucepan over medium heat, cook carrots with water, soy sauce, mirin, dry sherry, sugar, and honey until tender. Drain them afterward.
  4. Tofu:

    • Heat firm tofu in a skillet over medium heat with soy sauce, sugar, honey, salt, and ground turmeric until the tofu absorbs the flavors and turns yellow.
  5. Nori Preparation:

    • Pass each nori sheet briefly over an open gas flame or electric burner until crisp.
    • Using scissors, cut each sheet in half and stack them together. Shred them with the scissors.
  6. Assembling the Dish:

    • Place the prepared rice in a large serving dish or on a platter.
    • Arrange the mushrooms, carrots, peas, and tofu on top of the rice in separate piles.
    • Mound the shredded nori in the center.
    • At serving time, toss all the ingredients together for a burst of flavors.
  7. Variation:

    • For a more colorful dish, consider adding sliced radishes, pickled ginger, and wasabi (hot mustard).
