Instructions:

Prepare the Vegetables:
Begin by peeling and finely chopping the carrots. Place them in a mixing bowl. -
Whisk the Eggs:
In a separate bowl, beat the 6 eggs with a fork. Add the whole milk and whisk together until well combined. Season the mixture with fine salt and black pepper to taste. -
Add the Veggies:
Stir in the chopped carrots and frozen peas, ensuring they are evenly mixed throughout the egg mixture. -
Incorporate the Prosciutto:
Cut the cooked ham (prosciutto cotto) into small pieces and add it to the bowl with the egg and vegetable mixture. Stir to incorporate. -
Fill the Molds:
Lightly grease your baking dish or individual muffin pans with extra virgin olive oil. Pour the egg mixture into the molds, filling each one up to about 2 cm in height. -
Bake the Frittatine:
Preheat your oven to 190°C (375°F) with the fan on (convection). Place the molds in the oven and bake for approximately 20 minutes, or until the frittatine are puffed up and golden. -
