Scrambled Egg Pelangi Recipe

Ingredients:

For the scrambled eggs:

  • 3 large eggs
  • 1 tablespoon all-purpose flour
  • 1 tablespoon tapioca flour

For the vegetables:

  • 1 sweet corn, kernels removed
  • 3 carrots, peeled and diced
  • 3 cabbage leaves, sliced into thin strips
  • 1 scallion, sliced diagonally
  • 1 tomato, diced
  • 1 onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 3 shallots, thinly sliced
  • 5 red bird’s eye chilies, sliced (optional, adjust according to spice preference)
  • 1 teaspoon sesame oil
  • 1 tablespoon oyster sauce
  • Salt, seasoning, and ground black pepper to taste
  • Oil and margarine for sautéing

Instructions:

  1. Prepare the Egg Mixture:
    In a small bowl, dissolve the all-purpose flour and tapioca flour in a little water. Whisk the mixture into the beaten eggs until well combined.

  2. Cook the Scrambled Eggs:
    Heat a non-stick skillet over medium heat and add a small amount of margarine. Pour in the egg mixture and cook, stirring occasionally, until the eggs are scrambled but still in larger chunks. Avoid overcooking to keep the texture tender. Once done, remove from the skillet and set aside.

  3. Sauté the Aromatics:
    In the same skillet, heat a bit of oil and sauté the garlic, shallots, and red chilies until fragrant.

  4. Add the Vegetables:
    Add the sweet corn and diced carrots to the skillet. Stir and cook for a few minutes, adding a splash of water to help soften the vegetables.

  5. Flavor the Vegetables:
    Stir in the sesame oil and oyster sauce. Season with salt, seasoning (if using), and ground black pepper to taste. Adjust the seasoning as needed.

  6. Combine Ingredients:
    Add the sliced cabbage to the skillet and stir briefly. Then, incorporate the previously prepared scrambled eggs, scallions, and diced tomato. Mix everything together until the cabbage begins to wilt.

  7. Finish and Serve:
    Allow the mixture to cook for a short while longer, just until the cabbage is tender. Remove from heat and serve immediately.
