Raw Peanuts (Moongphali) 2 tablespoons
Asafoetida (Hing) A pinch
Turmeric Powder (Haldi) 1/4 teaspoon
Tamarind Extract From 1/2 lemon-sized tamarind
Sunflower Oil As needed

Instructions:

  1. Cook the Millet:
    In a vessel, add 1/2 cup of foxtail millet with 1 cup of water. Bring the water to a boil. Once it begins boiling, lower the heat to simmer and cover the vessel, leaving a slight crack in the lid to allow steam to escape. Let it cook for 8-10 minutes, or until the water is absorbed. Allow it to sit, covered, for an additional 2 minutes before transferring the millet to a separate bowl. Let the millet cool completely.

  2. Prepare the Ground Paste:
    In a blender or mixie jar, combine the coriander leaves, green chilies, cumin powder, garlic, tamarind extract, and salt. Grind these ingredients to a smooth paste. Set it aside.

  3. Prepare the Tempering:
    Heat some sunflower oil in a pan over medium heat. Once hot, add the mustard seeds and allow them to splutter. Add the white urad dal, chana dal, and peanuts to the pan. Roast them on low heat until they turn golden brown, stirring frequently to avoid burning.

  4. Add Spices and Paste:
    Now add the asafoetida (hing), turmeric powder, dry red chili, and curry leaves to the pan. Stir everything together and sautΓ© for about 1-2 minutes, allowing the spices to bloom. Add the prepared coriander-tamarind paste and sautΓ© the mixture for another 3-4 minutes until the raw smell disappears. If the paste begins to dry out, add a tiny splash of water to loosen it.

  5. Mix with Millet:
    Once the paste is cooked and aromatic, gently add the cooked and cooled foxtail millet to the pan. Stir gently to ensure the millet is evenly coated with the paste and spices. Adjust the salt to taste.

  6. Serve and Garnish:
