Paccheri with Cotechino Ragù

Extra Virgin Olive Oil 10g
Black Pepper To taste

Instructions:

  1. Prepare the Cotechino: Start by blanching the pre-cooked cotechino in boiling water for a few minutes to make it easier to peel. Once blanched, remove the casing.

  2. Chop Vegetables: Peel and finely chop the onion, carrot, and celery into small pieces.

  3. Sauté Aromatics: In a large skillet, heat the extra virgin olive oil over medium heat. Add the whole garlic clove, fresh chili pepper, and rosemary. Sauté for about 2-3 minutes, stirring occasionally, to release the flavors.

  4. Cook the Cotechino: Add the diced cotechino to the pan and let it cook for 5 minutes, stirring occasionally.

  5. Deglaze with Wine: Once the cotechino is browned, pour in the red wine and let it cook off for a minute, stirring to combine. Lower the heat and remove the garlic.

  6. Simmer the Ragù: Add the tomato passata to the pan, stirring well to incorporate. Cover and let the ragù simmer on low heat for approximately 30 minutes. The sauce should thicken and become rich in flavor.

  7. Cook the Paccheri: Meanwhile, bring a large pot of salted water to a boil. Add the paccheri and cook according to the package instructions, until al dente.

  8. Combine the Pasta and Ragù: Once the paccheri is cooked, drain the pasta and add it directly to the skillet with the cotechino ragù. Toss everything together over high heat for a minute to coat the pasta with the sauce.

  9. Finish the Dish: Grate the Grana Padano DOP and sprinkle it over the pasta, stirring to incorporate. If the sauce is too thick, add a little pasta water to achieve the desired consistency.

  10. Serve: Turn off the heat, adjust the seasoning with black pepper, and serve your Paccheri with Cotechino Ragù hot, garnished with extra rosemary if desired.
