Prepare the Cotechino: Start by blanching the pre-cooked cotechino in boiling water for a few minutes to make it easier to peel. Once blanched, remove the casing.

Chop Vegetables: Peel and finely chop the onion, carrot, and celery into small pieces.

Sauté Aromatics: In a large skillet, heat the extra virgin olive oil over medium heat. Add the whole garlic clove, fresh chili pepper, and rosemary. Sauté for about 2-3 minutes, stirring occasionally, to release the flavors.
